Deli

Our deli is a true extension of our craft — showcasing the finest offerings from our sister brand, Tempesta Salumi, alongside our in-house line: Volo Quality Meats (VQM). We produce our VQM deli meats, salami, snack sticks, summer sausages, and smoked meats right here in our on-site USDA facility. These are complemented by Tempesta’s award-winning Italian-style salumi — bold, traditional, and made with exceptional care. The deli case also features specialty salads and Chef Anna’s heat-and-eat favorites.

Tempesta Artisan Salumi

Tempesta Artisan Salumi Crafted in Chicago by the Fiasche family, Tempesta is known for bold, flavorful salumi made using traditional Italian methods and high-quality heritage pork. Their award-winning lineup includes classics like Finocchiona, Soppressata, ‘Nduja, and Bresaola — all slow-cured, naturally fermented, and packed with character. We proudly slice Tempesta salumi to order at Volo. Ask for pairing ideas or grab a few favorites for your next board.

Our cheese selection features a rotating mix of American artisanal producers and classic Italian favorites. You'll find cow, sheep, and goat milk cheeses in our deli case, ready to be sliced or cut to order, with select options pre-packed in our retail coolers. Whether you're building a board or just need a snack, we’re happy to offer samples and help you find the perfect pairing.

Italian Cheeses

Our Italian cheese case features a curated lineup of regional classics, from the sharp, savory depth of Parmigiano Reggiano and Pecorino Romano to the delicate richness of Mozzarella Ovoline and Ricotta Primo Dolce by Grande. We also offer Provolone in several styles — Dolce, Piccante, and Calabrese — alongside bold flavors like Pecorino Calabrese, Pecorino del Monte Poro DOP, Asiago Fresco, Fontina Val d’Aosta, Gorgonzola Dolce, and Blu Mugello. These cheeses are ideal for grating, melting, or pairing with our salumi and housemade breads.

American Artisianal Cheeses

Our domestic cheese selection showcases some of the finest American cheesemakers, with a strong focus on Wisconsin’s award-winning dairies. We feature a range of milk types — cow, goat, and sheep — and offer everything from crumbly aged cheddars to creamy soft-ripened wheels. Hook’s Cheese Co. supplies us with their 2-Year White Cheddar, Mild Cheddar, and other seasonal aged varieties. Carr Valley brings a deep bench of crowd favorites like Valley Snow White, along with other small-format wheels and aged sheep and goat milk options. You’ll also find Redhead Creamery’s Lucy Brie, Marieke’s Truffle Gouda, Butterkäse from both Edelweiss and Widmer’s, and inventive cheeses from Roelli Cheese Haus including Dunbarton Blue, Red Rock, and Little Mountain. From sliced deli cuts to centerpiece-worthy wedges, we cut to order and offer samples daily.

Chef Anna’s Ready-to-Heat Favorites

Homemade comfort, ready when you are. Chef Anna’s classic Italian dishes and deli sides are made from scratch with premium ingredients—perfect for a quick family meal, special occasion, or a catered spread. Available daily in our deli case. Ask about larger portions for catering or special orders.

Stuffed Eggplant

Tender eggplant filled with savory meat and cheese, topped with marinara and baked to perfection.

Eggplant Parmigano

Layered with house marinara, mozzarella, and Parmigiano-Reggiano. Crispy, cheesy, and satisfying.

Braciole

Thinly sliced beef rolled with pecorino romano, golden raisins, roasted garlic, fresh parsley, and mortadella, then slow-simmered in red sauce. A rich and soulful Italian classic.

Caprese Salad
