Our Story

Volando Market (home of Volo Quality Meats) is the culmination of three generations of Italian culinary tradition, craft, and passion — all rooted in family.

Agostino and Anna Fiasche immigrated from Calabria and Naples, respectively. They met in Chicago, where their love story was written in the language of food. Both were talented chefs in their own right, and together they opened Agostino Gustofino, a beloved Italian restaurant they operated for 38 years with their growing family at their side.

Their son Tony, dedicated to continuing the family craft, revived a Calabrian specialty from his father's hometown: 'nduja. That commitment to authenticity and quality gave birth to 'Nduja Artisans, a company grounded in the philosophy that if it’s simple, it must be the best. Using Berkshire pork and Calabrian peppers grown on his grandfather’s villa, Tony created the most authentic 'nduja on the American market.

Over the past 15 years, the company evolved into Tempesta, a tribute to the Windy City, now nationally recognized and award-winning. As demand grew, Tempesta outgrew its co-packers and was offered the rare opportunity to acquire a century-old German smokehouse. After a 3-year renovation, the facility was transformed into a state-of-the-art USDA-certified plant that now supports not just their brand, but also other emerging salumi and sausage makers looking to share their family recipes with the world.

Volo Quality Meats is the storefront showcase of everything this legacy represents. A market where craftsmanship meets community, where neighbors are welcomed, and where boundaries in tradition, service, and flavor are pushed daily. It is the vision of Tony, his family, his business partner Vince, and the incredible team that makes it all possible.

The name Volando — Italian for “flying” — captures the momentum and ambition behind our journey. It also echoes the energy of our sister brand, Tempesta (meaning "storm"), creating a powerful theme: from wind to flight, from movement to mastery. Volando is more than a market — it's a rising force of craft, flavor, and community.
