Our Story
Volo Quality Meats is the culmination of three generations of Italian culinary tradition, craft, and passion — all rooted in family.
Agostino and Anna Fiasche immigrated from Calabria and Naples, respectively. They met in Chicago, where their love story was written in the language of food. Both were talented chefs in their own right, and together they opened Agostino Gustofino, a beloved Italian restaurant they operated for 38 years with their growing family at their side.
Their son Tony, dedicated to continuing the family craft, revived a Calabrian specialty from his father's hometown: 'nduja. That commitment to authenticity and quality gave birth to 'Nduja Artisans, a company grounded in the philosophy that if it’s simple, it must be the best. Using Berkshire pork and Calabrian peppers grown on his grandfather’s villa, Tony created the most authentic 'nduja on the American market.
Over the past 15 years, the company has grown into Tempesta, a proud tribute to the Windy City, now a nationally recognized, award-winning name in salumi.
This journey led to the acquisition of a century-old German smokehouse, a landmark lovingly operated by the Koenemann family for nearly 100 years.
After a meticulous 3-year transformation, this historic site now thrives as a state-of-the-art USDA-certified plant, where Tempesta crafts its signature products while honoring the legacy of those who came before, and opening doors for other passionate makers to share their family recipes with the world.
Volo Quality Meats is more than a storefront; it’s a gathering place built on the values of family, flavor, and craftsmanship. Here, neighbors are welcomed like friends, traditions are celebrated, and new boundaries in service and taste are explored daily. It’s the shared vision of Tony, his family, their partner Vince, and the remarkable team behind it all.
The name Volo, Italian for “flight”, captures our drive to rise higher and push boundaries.
It reflects the spirit of our sister brand, Tempesta (meaning “storm”), together forming a narrative of energy and transformation: from wind to flight, from passion to mastery.
